Zucchini Pasta with sun-dried tomatoes and Kalamata olives ! (low carb,gluten free)

This dish is very flavorful and doesn't take much time to make !


Ingredients:


-2 spiral sliced large zucchini

-2 tbs of macadamia nut oil

-1 cup of baby-spinach

-2 tbs of ghee

-2 tbs of parsley

-10 halved kalamata olives

-1/4 cup of sun-dried tomatoes

-1/4 cup of shredded Parmesan cheese

-1/4 cup of feta cheese

-minced garlic (5 cloves)

-black pepper and sea salt



Instructions:


-Heat up a large saute pan to medium.

-Add spinach,ghee,macadamia nut oil , zucchini,salt and pepper,garlic,spinach,.

-Saute it until spinach and zucchini is tender then drain the extra liquid.

-Add parsley,olives,capers and sun-dried tomatoes and cook it for another 2-3 minutes.

-Sprinkle Parmesan and feta cheese before serving.
